You can also sign up for one of their <strong>courses and tastings,<\/strong>\u00a0which come highly recommended. The cheese smell is intense and pleasant, natural. Cultivo is a store bubbling with vitality. It changes all the time with the arrival of new \u201ccheeses with a face to them\u201d &#8211; as they like to refer to the creations of <strong>small artisan producers<\/strong>. Particularly recommended are the <strong>Torrej\u00f3n Cantagrullas,<\/strong>\u00a0with ash, and <strong>Cheddar 40<\/strong>\u00a0(an enormous 40-kilo cheese made with cow\u2019s milk!). Besides cheese, they sell\u00a0<strong>fresh goat\u2019s milk<\/strong>, yogurt, butter and other products such as \u201cpuchero\u201d (French press) coffee or tea from plantations in Rwanda where they are immersed in an amazing project: the creation of the country\u2019s first dairy, with aid from European funds. They organise tastings and courses in the store. He is a guru in the world of cheese, milk and all its derivatives\u2026 and he\u2019s always on the go. He runs <strong>Gourmetquesos<\/strong> during the Gourmets Fair, he acts as an advisor for specialist guidebooks and publications, he organises various <strong>workshops<\/strong>\u00a0ranging from how to pair cheeses with beers to the creation of cheese or yoghurt &#8211; each one a master class that shouldn&#8217;t be missed.
